This one-tray veggie bake means we can spend more time with family and friends, while the oven does all the work.
One of our favourite and simplest versions, with mixed vegetables, a little oil and black seed, this wholesome bake can be made anytime of the year, with any vegetables you have in the fridge that are in season!
Serves: 4-6
Time: 10 minutes prep & 38 minutes cooking time
Ingredients:
- 1- 4 large potatoes
- 1 red capsicum
- 1 broccoli
- 3 stems of cavolo nero kale
- 1 tin of kidney beans
- 1 bunch of coriander
- 2 tbsp olive oil
- 1 tsp cracked salt and pepper
- 2 tbsp black seed
Method:
- Preheat the oven to 190 degrees celsius
- Wash and chop the potatoes, broccoli and capsicum and add them to your tray
- Pour over the kidney beans and mix everything together in the tray
- Drizzle with olive oil and top with salt, pepper and black seeds
- Place in the oven for 30 minutes
- Remove from the oven and add the roughly chopped kale
- Place back in the oven for a further 8 minutes
- Remove from the oven and serve with a generous sprinkling of coriander
