Radish Leaf Pesto

Do you feel guilty from throwing away those beautiful leafy greens that come with your radish? Why not save them and make a unique and delicious, peppery pesto. It will blend well with pasta salad, as a fish dressing or savoury spread on a sandwich. We promise this punchy pesto will be a welcomed addition to the many picnics enjoyed with family and friends that await us in the warm days ahead.


Serves: 1 cup

Preparation time: 10 minutes

Ingredients: 

  • 60g radish greens
  • ⅓ cup of olive oil
  • ¼ cup of parmesan cheese
  • Juice of ½ lemon
  • 1 small garlic cloves
  • ½ cup of almonds, macadamia, pistachios or pine nuts (chopped/slivered)
  • Salt and pepper

Method:

  1. Carefully wash the leaves to get rid of soil and any debri and leave them to dry
  2. Combine all the ingredients in a blender or food processor
  3. Blend until smooth
  4. Add additional olive oil to make a smoother pesto
  5. Add additional season to taste
